I also used shortbread cookies because I couldn’t find Graham crackers.

I was searching for a cheesecake bar recipe and stumbled upon yours, and it was absolutely delicious!! I changed the graham cracker crust for a biscoff cookie crust and added a little bit extra vanilla to the cheesecake, and the results were amazing! The cheesecake cooked perfectly and came out super creamy and wonderfully rich. This will definitely be on rotation in my house, thank you for sharing!

Just got back from the grocery store and accidentally bought 1 block 1/3 less fat cream cheese and 1 block regular. Should try it or not?

In reply to Betty Rogers. Yes, that would be fine! You may want to start with just 4 tablespoons of melted butter, then add another tablespoon if the mixture feels too dry.
