You do need the sour cream for this recipe. It doesn’t make the cheesecakes taste like sour cream, just keeps them from being too dense.

You can store it in the fridge for 4 to 5 days. If you need to store it longer than that, I recommend freezing it.

Yes, you can freeze the sauce! I would recommend freezing the cheesecakes and strawberry sauce separately though.

Can the strawberry sauce be frozen too? Making these for a friend to use at her sisters shower, but I will be out of town the week of her party. So I am making and freezing a bunch for her! 

  I used your recipes for a few different cheesecakes at a friends wedding last year and they were a hit!! I did them bite size. So cute and delicious!
