Did you make sure to keep an eye on them while they were under the broiler? It’s always worked fine for me, but every oven is different.

I haven’t, but I think it would be okay as long as you have a pan big enough to fit 12 ramekins for a water bath. If not, you could make a batch of 8 then another one with 4.
