This has a great flavor and texture in my eyes. It is very akin to pumpkin pie without a crust. It had mixed success in my house. One member, of ten, didn’t like the texture. Another preferred this texture and she does not like cakey cakes, she prefers cheesecakes. This texture softness may have been because I used homemade processed pumpkin puree and didn’t take time to strain out the extra liquid. I also had to cook it a little longer either bc of the liquid or bc I used a glass 10×15 dish. Thanks!

You can leave it out, but keep in mind that the bars won’t taste quite the same. You could increase the cinnamon as well.
