Thank you, Carla! Are you able to find golden syrup? If so, that would be the best substitute for the corn syrup. Maple syrup would probably work too, but I haven’t tested it yet. It is thinner than corn syrup though, so you may want to add 1 tablespoon of flour to the filling to thicken it.
