The frosting should be okay to use under fondant as long as you crush the Oreos into fine crumbs. You just don’t want any large chunks of cookies in the frosting.

Yes, that would be fine! It will take about 35 to 40 minutes in a 9×13 pan. I would cut the frosting in half too.
