I goofed a little and prepped 3 9 inch pans, so my layers were a little bit thinner, and I had just enough frosting. The cake is beautifully moist and delicious. I even made the cake with Splenda granulated and Splenda brown sugar as we are trying to cut sugar where we can, but wanted something special for my husbands bday. I did use regular confectioners sugar in the frosting, and it is one of the best frostings I have ever had!

Hi, Victoria! It would probably be fine to double it, but it will be a lot of cake batter so you will want to be careful not to over mix it. It may be best to make two separate batches of cake batter, just to be safe. You can use this recipe to make cupcakes or you can use my chocolate cupcake recipe here.

This was amazing, but I have to feed a lot of people so can I double and make 6 layers? Or can I make one cake then use the recipe and make cupcakes?

Hi, Lauren! You could divide part of the batter between the 3 pans and use the rest to make cupcakes. Or you could use my chocolate cupcake recipe here and divide it between three 6-inch pans. It’s similar to this recipe, but scaled down. As for the frosting, you would only need half the amount to frost a 6-inch cake. Baking time will depend on how full you fill the cake pans. If you use my chocolate cupcake recipe, it should be about 25 minutes.

It’s delicious! A must if you like chocolate and peanut butter. I may have gone a little overboard with the frosting, but that isn’t the fault of the recipe 🙂 I made two 9 inch cakes, and they turned out delicious. I think the chocolate ganache is a great touch.
