Happy Fall-my first attempt did not ever thicken or set up-used 100 pure pumpkins instead of pumpkin purée……..

Icebox cakes are my favorite! I made a pumpkin version a few weeks ago, but didn’t think to add caramel. Looks so good, especially with that whipped cream on top! Just what I need on this Monday morning!

What a perfect fall treat! For some reason I think of icebox cakes as warm weather desserts, but this version is spot-on for this time of year.
