Did you follow the directions to a T? Mine was moist, full of flavor as was the topping. It’s a shame that yours didn’t turn out well.

I made this Sweet Potato Casserole as a side dish for Easter Dinner with ham. It was delicious. The consistency was perfect and the topping was phenomenal. Everyone at the table raved about it. It definitely is a keeper and I will make it again.

I don’t recommend it for this recipe. Self rising flour has baking powder and salt added to it.

I haven’t tried it, but it would probably be okay to use canned. I would use 4 pounds of canned sweet potatoes.

Hi, Cheryl! To be honest, I’ve never measured out the amount of mashed sweet potatoes in cups. I always just weigh the sweet potatoes out to 4 pounds, then peel, cube, boil, and mash them.
