Made these today – I needed some pineapple juice for a different recipe and didn’t want to toss the pineapple itself. Didn’t help that within two minutes of starting making these my son called….I completely forgot about adding the coconut! I felt the cornstarch was far too much and since I only had about 2 tablespoons I went ahead with that. I was still very thick so I’m glad I only used half the amount. These make a nice refreshing change from all the chocolate and oatmeal and peanut butter recipes!

Made this it is amazing. Perfect amount of sweetness, the crust is like a shortbread flavor, so good. Its a lighter color thank you think it would be, but the taste is superb. Thank you!!
