I’m honestly not sure what you mean by it had cocoa sticking up. If you sift the cocoa powder (as instructed in step 2) and mix it with the wet ingredients as well as the boiling water you shouldn’t have any lumps of cocoa powder.

Did you make any adjustments to the recipe? The only time I’ve ever had an issue with this cake sinking in the center was when I ran out of natural cocoa powder and used Dutch process cocoa powder instead. Over mixing the batter, opening the oven door too much, or removing it from the oven before it’s fully baked through can cause that to happen as well.

I’ve never had that happen before.  I’ve made 100’s of cakes.   Any ideas as to why that happened? I used both fresh baking soda and fresh baking powder.

I’m not sure on the nutritional information, but you can plug everything into an online calculator (like My Fitness Pal) to get an estimate.
