I thought the cake was dry, and frosting too sweet. I thought it would be much better because of the oil, applesauce, and buttermilk, but was disappointed. I would probably use half the powdered sugar for the frosting, than using 2 cups. Would tweek it differently next time for sure.

I don’t think it would work well for this recipe. I do have an easy pumpkin muffin recipe though, you can skip the crumb topping if you prefer.

Do you think your dry ingredients plus a can of pumpkin might achieve the same desired effect? I’m just trying to get away from using box mixes. Thanks for your thoughts!

Absolutely loved how simple this recipe came together! Also, for any celiacs wondering if this recipe can be adjusted well, I used Bob’s Red Mill 1-1 Gluten Free baking flour and it came out perfect! So light and fluffy, my girlfriend could not believe that it was gluten free! I think the applesauce really helped the texture and moisture of the cake.

So moist and delicious. I’ve found spice cakes can be dry but this recipe is worth making. It’s a keeper for sure. The birthday boy (77 years) wanted brown sugar fudge icing on it and did it ever go well with the spice cake!

I made this today, and we just got to try it! It’s perfect! Easy and so good! Hubby was wanting a bold spice cake, so the only thing I did differently was I added rounded instead of leveled measurements of the spices. thank you for sharing!
