It sounds like the logs of dough may have been baked too long before you sliced into them. If you happened to shape them differently than I did, that will affect the baking time. I’m not sure what your go-to recipe is for biscotti, but unless everything is exactly the same except for the flour, then it’s hard to compare one to the other.

I decided to try this recipe for a change and had the same problem when cutting it, the biscotti crumbled.

I spooned and measured the flour carefully. When comparing it to my “go to” biscotti recipe, it had 3/4 c more flour. Am wondering if that is the issue with this recipe.

I folded in mini dark chocolate chips and the biscotti were a hit with my work colleagues. I found the dough was easier to work with compared to other biscotti recipes I have tried. I will save this as a good base recipe to experiment with different flavours and additions!

Did you make sure to spoon and level your flour? And did you double check the amount of oil and eggs that you used? The dough shouldn’t be super dry, it should come together pretty easily.

The dough was super dry like it needed more moisture.
