If you partially bake the bottom, you won’t be able to flute the top and bottom crust together. I don’t partially bake the bottom crust for fruit pies.

Hi, Sybil! For a fully baked pie crust, you want to bake it with the pie weights for 15 minutes, then without the pie weights for an additional 15 to 20 minutes. The optional egg wash is for the partially baked pie crust. I adjusted the instructions to try to make that more clear.

And for a fully baked crust bake an additional 15-20 minutes + 6-8 with the egg wash? Total 36 minutes?

Hi, Kady! You can freeze your pie crusts ahead of time, but I’d recommend thawing them in the refrigerator the night before and then following the instructions as written. I hope that helps!

You can reuse the rice for blind baking another pie crust. I wouldn’t reuse the rice to cook with and eat though.
