In reply to Mary Domingo. Hi, Mary! Yes, you can use pumpkin pie spice instead. I would start with 2 teaspoons and add 1/2 to 1 more teaspoon, if needed. The cookie dough can be refrigerated for 2 to 3 days.

Hi Danielle, I came across your carrot cake cookie recipe and me being the cook and not a baker, will attempt for my BF’s birthday on Saturday. Couple questions, can I use pumpkin pie spice instead of each spice as everything is in it. If so, how much? How long can I refrigerate the dough ?

In reply to Dennis. I haven't tried freezing them with the frosting yet. You can freeze the cookies and frosting separately, then frost them the day you plan to serve them.

In reply to Chris. Did you make sure to chill the dough? And did you double check all of the measurements that you used? This is a stickier cookie dough because the shredded carrots add moisture to it, but it should scoop fairly easy with a cookie scoop.

My cookie dough got super sticky to the point where I couldn’t use my scooper anymore and I was trying to Palm roll em and they were just caking my hands up w went wrong I can’t believe this. Failed Miserably.
