I am so glad that I tried this recipe. It was really easy. The soft and chewy texture made it so easy to fall in love with it. This is my new go to Christmas cookie.

I would weigh one egg and one egg yolk, lightly beat them together, then only add half of that weight to the butter and sugar.

OMG these are the absolute best snickerdoodles ever. So perfectly soft, most and chewy… exactly how a cookie should be. Anyone who says otherwise is not following the recipe or their oven is messed up. I followed it exactly. Sooooooo good!! Thanks.

The post and the ingredients in the recipe both say 1 large egg and 1 large egg yolk, not 2 egg yolks. This is a thicker cookie dough, so if you only used 2 egg yolks then that’s likely why it was so crumbly.

I couldn’t even form a ball. After re reading the entire article to see if I missed something, I noticed in the ingredients it says 2 egg yolks and in the text written before the recipe, you explain why you use 1 egg and 1 yolk. Im assuming this is why my dough turned out weird as I measured everything on a scale and followed instructions.

I had the same issue. I cook/bake a lot. It seemed like a lot of flour to me for 2 sticks of butter and 1 egg and 1 yolk. 

I ended up adding a little water to make the dough a dough. And that seemed to be a workable solution. And I double checked the ingredients and measurements to make sure I didn’t mess up somewhere.

Thank you sooo much for this recipe!! I now have made 6 batches of cookies- other folks in house( kids & husband) have continued to eat them all! These are so good, my husband says they taste like the one his grandma made which is the highest praise he gives! The only thing I would do different is add more cinnamon to the coating but that’s just personal preference.
