I wouldn’t suggest using oil, but margarine or a plant based butter would probably be fine.

You can probably store it for another day, but keep in mind that the bananas will be really brown and the vanilla wafers will be very soft.

Also for a tip after a few days the banana will turn dark.. put them in some lime juice and it keeps them pretty ?
